What is the seltzer water used for in the butter?
You only use the bottle itself, for shaking the cream. (You could use any container that’s double the volume of the cream, but I like using a bottle with a tapered top, as it makes pouring out the buttermilk and the water from rinsing very simple. Once rinsing is complete, you cut the top off and remove the butter.)

I am so excited that I came across your blog. I have been falling into and out of love with so many food blogs, but I recently fell out of love with my favorite and there has been a hole in my Sunday mornings. Seeing your recipes, your pictures, the comments on your posts, and of course reading your anecdotes makes me excited to see that I have finally found a blog written by someone who cares about the art of food (and has a personality not dissimilar from my own). Not to mention you are from Vermont, which is one of my favorite places from childhood.
